Just about every day we make a loaf of gluten free bread. Sunday we had to use brown rice flour since all the rice flour was gone. What a horrible idea that was. The bread machine kept mixing the blob of dough and it was just a big ball. Jessica took one look and said that was not going to work. So, we scraped the dough out into a bowl and started adding milk to soften it up. I started another batch of bread using what ever was available since the white rice flour was gone. I used tappioca flour, oats and flaxmeal. Then we started dropping spoonfuls of the brown rice dough into the machine as it mixed. The machine had to be started 3 times in order to get the bread mixed well. It's a heavy loaf too! I even had to put the rest of the dough in the oven to bake. I didn't get to bed until after 1 am because it had to rise 1 hour then bake.
The bread isn't very tasty either. I made bread pudding out of it and the kids gobbled it up. Jessica even said pudding turned out better than expected. Unfortunately, brown rice makes ya "go" and my kids are going!
The rice flour was delivered today so I can make regular sandwich bread tonight. The kids can't live without bread! They are all 3 what we call dough babies.
